If you are looking for a simple to make treat that is both tasty and almost guilt-free, consider making a batch of Chocolate, Pistachio, Cherry, Corn Chex Clusters. We know dark chocolate and pistachios have great health benefits. Corn Chex is breakfast, so it can’t be that bad and they are gluten free. And well, dried cherries are just delicious! They are a fruit after all!
These treats may not be pretty, but you and your family, will enjoy them!

Chocolate, Pistachio, Cherry, Corn Chex Clusters

Yield: about 24 clusters – Prep Time: 15 Minutes

Ingredients:

  • ½ Cup Chopped Pistachio Nutmeats
  • 2 Cup Dark Chocolate Chips
  • ½ Cup Dried Cherries, coarsely chopped
  • 2 Cups Corn Chex

Directions:

  • Line a cookie sheet with parchment or wax paper
  • In a bowl, heat chocolate in the microwave at high power in 30-second bursts until just melted (Do NOT overcook)
  • Remove bowl from microwave and stir until smooth.
  • Stir in cherries, pistachios, and corn Chex until evenly covered with chocolate.
  • Scoop out tablespoon sized portions on to prepared cookie sheet
  • Refrigerate for about 1 hour until firm
  • Serve at room temperature.
  • Enjoy!!

The clusters can be kept in an airtight container at room temperature for 4 days or refrigerated for 4 weeks.
