Pistachio, Cranberry Bark

If you are looking for a delicious holiday treat that looks festive and tastes divine, consider some pistachio, cranberry bark. This recipe is so easy, you’ll be wanting to make it for every holiday event you attend. It displays perfectly on any holiday buffet or cookie tray. They also make great hostess, or teacher gifts. Just wrap them up in a cellophane bag and tie with a ribbon.
It’s important that you use the best quality chocolate and pistachios for this recipe. Both dark and white chocolate work great. A combination of both would make quite the splash. The dark chocolate version may be eaten almost guilt free. Dark chocolate is good for your heart and cognition, pistachios help fight diabetes and are good for your heart, and cranberries prevent certain types of cancer and decrease blood pressure. Maybe we should eat these all day, all year around?
Perhaps Santa would prefer a plate of pistachio, cranberry bark over cookies this year?
With only four ingredients, this may be the simplest recipe out there…
Pistachio, Cranberry Bark
Yield: Serves 6-8
Prep Time: 15 Minutes
Ingredients:
1 1/2 Cups Pistachio Nutmeats
10oz Of Your Favorite Chocolate
1 Cup Dried Cranberries
Line a cookie sheet with parchment or wax paper
In a bowl, heat chocolate in the microwave at high power in 30-second bursts until just melted (Do NOT overcook)
Remove bowl from microwave and stir until smooth.
Stir in half of the cranberries and pistachio nutmeats, spread on to prepared cookie sheet into about a 12 x 8 inch rectangle.
Immediately evenly sprinkle remaining nutmeats and cranberries on top.
Refrigerate for about 1 hour until firm enough to cut.
Cut bark into manageable pieces and transfer to a decorative plate. They probably won’t be perfect pieces, but who cares. They look tantalizing, none-the-less.
Serve at room temperature.

The bark can be kept in an airtight container at room temperature for 4 days or refrigerated for 4 weeks.
